5 Simple Weeknight Dinner Ideas Your Kids Will Actually Eat
As a mom of busy kids, I know the struggle of getting dinner on the table between homework, sports practice, and bedtime routines. Here are my go-to weeknight meals that never fail:
1. Slow Cooker Pork Carnitas
This is my secret weapon for busy mornings. Season a pork shoulder, toss it in the crockpot with onions and spices, and let it cook all day. By dinner time, you have tender, flavorful meat that's perfect for tacos, burritos, or bowls. The kids love building their own!
2. Pasta Primavera
This is my secret weapon. Pasta cooks in 10 minutes, and I toss in whatever veggies I have on hand. The kids love it because they can pick around what they don't like, and I love it because they're still getting vegetables.
3. Homemade Pizza Night
We do this every Friday. I prep the dough in the morning (or use store-bought - no judgment!), and the kids top their own pizzas. It's become our favorite family tradition.
4. Taco Tuesday
Ground beef or turkey, taco seasoning, and all the toppings. The kids love the interactive element, and I love that it takes less than 20 minutes.
5. Slow Cooker Pulled Pork
This is my Monday lifesaver. I throw everything in the slow cooker in the morning, and by dinner time, we have tender, flavorful meat that's perfect for sandwiches, tacos, or over rice.
What are your go-to weeknight meals? I'd love to hear what works for your family!
